FORMULASI TERANG BULAN UBI KUNING ISI DAGING AYAM GILING, KACANG IJO, KEJU, SEBAGAI PEMBERIAN MAKANAN TAMBAHAN PADA BALITA WASTING

Background: Wasting is an acute malnutrition condition with significant weight loss and high mortality risk. Developing local nutritious food such as yellow sweet potato “terang bulan” with fillings like ground chicken, mung beans, and cheese is a potential PMT intervention. Objective: To analyze the nutritional value, energy, descriptive sensory evaluation, and organoleptic quality of yellow sweet potato terang bulan as PMT for wasting toddlers. Design: Experimental study with a completely randomized design (CRD) using three treatments (T1: chicken, T2: mung beans, T3: cheese). Nutritional analysis was calculated empirically. Organoleptic tests were conducted by 25 semi-trained panelists using hedonic and descriptive scales. Results: All formulas met PMT standards (energy 225–275 Kcal/100 g). Energy ranged from 238–275 Kcal, protein 4.9–10.3 g, fat 5.1–8.9 g, carbohydrate 38.5–45.2 g. T2 received highest scores in color, aroma, and taste. Conclusion: The mung bean variant (T2) was the most acceptable and fulfilled PMT nutritional standards.
