Gaston Musala Luniama, Mukwa Fils Tumi Copyright (c) 2025 Gaston Musala Luniama https://ojs.poltekkes-malang.ac.id/Nutriture/article/view/5030 Fri, 03 Oct 2025 00:00:00 +0000 THE INDUCE DAMAGE TO LIVER AND KIDNEY OF WISTAR RAT BY SPENT VEGETABLE OIL AND THE AMELIORATING POTENTIALS OF COCONUT OIL https://ojs.poltekkes-malang.ac.id/Nutriture/article/view/4405
It has been a regular practice in this part of the world to continually use spent edible oil and consumed it without knowing the harmful effects of such. Heating results in the formation of free reactive oxygen species (ROS) which is responsible for oxidative stress and changes to various organs in the body. The study aimed at investigating the changes caused on liver and kidney by consumption of repeatedly used (spent) oil and possible ameliorating potential of virgin coconut oil (VCO) on spent vegetable oil-induced liver and kidney changes in Wistar albino rats. Blood samples were obtained and assayed for biomarkers of liver and kidney damage; It was observed that spent vegetable oils induced severe damage on liver and kidney. While administration of virgin coconut oil significantly (p<0.05) reversed the changes induced by the spent oil as observed in the biomarkers AST, ALT, ALP, Urea, Creatinine, Uric acid, Total serum protein, Albumin. These findings suggest that VCO could ameliorate the adverse effect of consumption of spent oil on liver and kidney indices in rats.
Istifanus Adamun Simon, Maryam D. Solomon, Rose S.A. One fruit that contains fiber is Siamese oranges. Citrus fruit can be used in various types of preparations so that its shelf life is longer. Preserving citrus fruit can be done by processing oranges into orange marmalade. Marmalade is a semi-solid food that has a gel-like texture. Substitution using date juice can be done to increase the nutritional content of orange jam which has decreased due to the heating process during production. Therefore, this study aims to determine the fiber content in the Siam orange jam formulation as a substitute for sukari date juice. This research is an experimental study with a Completely Randomized Design (CRD) using the crude fiber test using the Weende method. The formulation of orange marmalade is carried out in 3 formulas with a ratio of orange flesh: orange peel and dates, namely F1 (100%:0); F2 (80%: 20%); F3 (85%: 15%). The research results showed that the most preferred formulation was F3 and the formulation with the highest crude fiber content was F3 with a content of 3%, followed by F2 with a content of 2.5% and F1 with a content of 2%.

Qothrunnadaa Fajr Rooiqoh Copyright (c) 2025 Qothrunnadaa Fajr Rooiqoh https://ojs.poltekkes-malang.ac.id/Nutriture/article/view/4581 Fri, 03 Oct 2025 00:00:00 +0000 Differences in Knowledge, Attitude, and Energy Consumption Before and After Online Media-Based Nutrition Education (VitaNutriHealth Application) on Overweight Students at SMAN 1 Bululawang Malang https://ojs.poltekkes-malang.ac.id/Nutriture/article/view/5406
Background: Background: The prevalence of overweight and obesity among adolescents aged 16-18 years in East Java is 10.2% and 4.7% (SKI, 2023). Data analysis used univariate, and bivariate using Paired Sample T-Test if the data is normally distributed and Wilcoxon Signed Test if the data is not normally distributed. Results and Conclusion: There is a significant difference between before and after nutrition counseling on knowledge, attitude and energy consumption of overweight students at SMAN 1 Bululawang Malang (p=0.000).
NURUL ISNAINI, Bastianus Doddy Riyadi, Juin Hadisuyitno, I Nengah Tanu Komalyna Copyright (c) 2025 NURUL ISNAINI, Bastianus Doddy Riyadi, Juin Hadisuyitno, I Nengah Tanu Komalyna https://ojs.poltekkes-malang.ac.id/Nutriture/article/view/5406 Fri, 03 Oct 2025 00:00:00 +0000 The Relationship Between Fruit, Vegetable, and Tea Consumption and the Incidence of Anemia in Pregnant Women https://ojs.poltekkes-malang.ac.id/Nutriture/article/view/5421

Ade Neva, Ika Amalina Bonita, Utami Harjantini, Muhana Rafika Copyright (c) 2025 Ade Neva, Ika Amalina Bonita, Utami Harjantini, Muhana Rafika https://ojs.poltekkes-malang.ac.id/Nutriture/article/view/5421 Fri, 03 Oct 2025 00:00:00 +0000
